Aunt Jean's Zucchini Pie!

Don't let the name fool you!!!  This is one of the best pies ever!  One of the sweetest, delicious, delightful flavors that you will ever put on your palate.

My great aunt Jean has made this pie since I was a little girl.  She handed this family recipe down to my mom, and my mom down to my sister and I.  Oh, how I love this pie....

If you make this pie, and never told anyone that it is made out of zucchini, they would never know :)

Zucchini Pie

1 uncooked pie crust
2 c. raw zucchini, PEELED down to the white (no green) and cut into little cubes (should equal 1 cup cooked)
1 c. sugar
1 egg
2 Tbsp Flour
1 c. Milnot (evap. milk)
1-1/2 Tbsp butter
1 tsp vanilla
Nutmeg and Cinnamon

Away we go!!
Preheat oven: 325 degrees
1.  Cook zucchini, until soft (almost mushy). Drain well.  Press as much liquid out as possible!
2.  Place in bowl, add all other ingredients. Mix.
3.  Pour into pie crust and cook for 45 minutes. Let sit for an hourish, it will help it set as it cools off.

Enjoy!!!!
