Shrimp & Pasta Primavera (sub. Chicken or No "meat")

We love, love seafood at our house.... We love to see food, and we love to eat seafood :)  And this my dears, was a winner!  A gold medal!  Do they have platinum or titanium medals yet?  Cause if so!  This dish would win them....

Another pretty easy dinner, the thing that takes the most time is cutting up the veggies (or cheat and get frozen veggies).  I enjoy the hands on part, and like to know everything is fresh, but everyone has different priorities and different ways of cooking.  Oh well...  I'm sure you just want the recipe anyway :)

*if you are NOT a seafood lover, shame on you, you could sub. chicken place of the shrimp OR if you would like it to be healthier, just enjoy the veggies and don't add any meat!

Shrimp & Pasta Primavera (McCormick Seasoning Style)

8 oz. linguine or pasta that you would like (fresh or boxed)
1 pound shrimp uncooked and peeled/deveined or boiled chicken strips
4 1/2 cups of cut up veggies (I cut up carrots, broccoli, a red bell pepper, and dumped in frozen peas)
1 cup heavy cream
3/4 cup chicken broth
1/2 cup grated Parmesan cheese
2 Tbsp. butter
1/2 tsp. salt
1 1/2 tsp dill
1 tsp minced garlic OR 1 pressed garlic clove
1 tsp minced onion  or 1/4 cup very finely cut up onion
1/2 tsp black pepper
1/4 tsp thyme

Ok!  To work we go!
1.  Depending on if you get fresh pasta or boxed.... but fresh is the world of difference!

- Fresh Pasta - In a large saucepan boil water, add in veggies and shrimp, cook for 3 minutes.  Then add in fresh pasta.  Cook everything for however long the pasta is to boil.  Should be just a few minutes.  2-4 minutes.  Dump and drain well.

- Boxed Pasta - In a large saucepan cook pasta as directed, 8-12 minutes.  Add veggies and shrimp in the last 3-4 minutes of cooking.  Dump and drain well.

2. In the same sauce pan, add in everything else!  Cream, broth, cheese, butter, and all the seasonings!  Bring them to a boil and whisk for 1 minute, then simmer on low for 5 minutes!  Add the pasta, veggies, and shrimp into sauce, toss and get everything nice and coated!  Serve immediately!  Add more Parmesan cheese if you would like!

Heaven on a plate!
